Dining out, we put our faith in the chef. In return, some chefs put their faith in Jack Daniel’s, the Five-Second Rule, MSG, or the persuasiveness of the “Employees must wash hands” sign in the bathroom. Bad things can happen in the kitchen. We like to know about them — hence the early career of Anthony Bourdain. Porchlight’s Kitchen Confidential is a chance to know a little more. Arline Klatte and Beth Lisick’s storytelling series invites a historian/waiter (Ron Henggeler), a playwright/bartender (Diane Karagienakos), and an animator/former restaurant owner (Scott Kravitz), to ladle up tales of restaurant weirdness. Great — people with aspirations beyond getting us our steak and another beer. What about the lifers? Well, how about NOPA line cook Richie Nakano and Delfina owner and chef Craig Stoll? Now we’re cooking with explosives.
