Do you like wordplay with your bone broth? Well, Belcampo Meats' new cocktail menu includes a "Boney Mary," but if that's not enough for you, check out Osso Good Bones (osso being the Italian word for bone), a Marin purveyor of conspicuously ethical and nutritious pastured animal extract.
Jumping on the biggest craze of 2015, Osso Good's co-founders Jazz Hilmer and Meredith Cochran (who are fiancées, IRL) labor to create a sipping beverage that minimizes waste. The chicken broth includes wings, feet and beaks, while the beef lists shank as well as some additional chicken parts. (Both sell for $12.99, with a slightly more expensive pork version in the works.) But animal collagen alone doesn't necessarily impart much flavor, and that's where Osso Good really goes to town. Simmering onions, carrots, celery, thyme, peppercorns and bay leaves into the pot makes this stuff taste more like a clarified country stew than a trendy urban remedy. While some other bone broths are perfectly fortifying, they typically benefit from a pinch of salt, yet Osso Good's is wonderful as is.
Moreover, the packaging is a little different than the standard quart containers you might buy in the supermarket, which can be a bit flimsy against a liquid as dense as bone broth. For Osso Good, the broth comes in 20-oz. bags that could very well hold meds for an IV drip, if the typography weren't so hip. We're not sure what that retro-contemporary font is called, but it could come straight from the U.S. Bureau of Engraving and Printing for use on the back of a redesigned $20 bill. Bone broth definitely has its detractors. (There's even a troll bot that swoops in to comment sarcastically every time the phrase is used on Twitter.) We're not going to comment authoritatively about the supposed benefits of drinking collagen-heavy bone broth. Osso Good claims a wealth of positives, from reduced arthritis to a healthy immune system to better digestion. However, from anecdotal evidence, we are definitely drinking less caffeine on the days when we heat some up first. Reduced coffee consumption alone could be the salvation of millions, but the important thing is that this bone broth is very, very good.
