The rundown: Josh Donald of Bernal Cutlery will arm you with the right way to take care of your knives and keep them properly pointy. Meanwhile, Bi-Rite Market's John Lee will equip you with knife techniques in this boot camp-like session while you prepare a group lunch. Bring your chef's knife for onsite sharpening; you'll also get a bag of vegetables and recipes to play with later.

Dishes include Japanese chrysanthemum with sesame, Indian mehti roti, Chinese mustard soup with pork ribs and wolf berries, and Southeast Asian watercress salad with roasted garlic and egg.

Last fall saw the opening of the San Francisco Cooking School, a new culinary education center in the Civic Center that offers professional degrees as well as classes for amateurs taught by some of the best chefs in the city. Today the school released the new lineup of winter "hands-on" classes for those not pursuing a culinary degree, and they sound like a pretty awesome way to make good on any cooking-related New Year's resolutions.

All through December, SFoodie is bringing you local gift ideas for the food obsessives in your life.

Pizza is beloved by nearly everyone. Yet achieving perfect pie in the home kitchen may not seem so easy -- there's flour to consider, along with cooking time, and let's not forget the sauce options. Give the gift of cheese and step up that pizza game: send a friend (or yourself) back to school at next month's pizza-making class at the San Francisco Cooking School. Priced at $160, it may be a bit more spendy that your usual gift item (or maybe we're just cheap?) but the benefits of getting so many delectable bites of pizza down the line are way worth it. The class is taught by Jill Santopietro, who is known as a walking, talking cooking resource.

The rundown: Batter Bakery founder Jen Musty leads a fun session breaking down how to make, mix, and tint royal icing, techniques on how to ice cookies, and how to decorate in finer detail using ingredients like sanding sugar, chocolate, and sprinkles. Students will take home the icing recipe as well as the four cookies they decorate in class; four are holiday-shaped shortbread and two are gingerbread. It's for a good cause, too: Proceeds of this class will benefit Project Open Hand.

The rundown: Author Laura Werlin leads a demonstration class and tasting of six cheeses. Kick back, let her do all the work, sip a glass of wine, and go home with recipes for goat cheese, beet, walnut, and candied fennel salad; double cheddar and tomato jam grilled cheese; and butternut squash, sage, and brown butter mac and cheese. Only a few spaces remain for this session.

San Francisco General Hospital Hosts Free Nutrition and Cooking Demos

The Community Wellness Center at San Francisco General Hospital just got a new kitchen that hosts free hour-long nutrition and cooking demos every Thursday at 2 p.m. (with a break on Nov. 22 for Thanksgiving). The sessions are taught by a rotating group of five chef/instructors who are involved with the hospital, including SFGH executive chef Chad Haase and Dontaye Ball of the hospital's newly redone cafe, Urban Gourmet Kitchen. Each class is aimed at teaching how to prepare a healthy and satisfying meal on a budget.

The rundown: Chef Thomas McNaughton (Flour + Water, Central Kitchen) breaks down what you need to know to make great turkey on Thanksgiving, including how to pick a perfect bird, how to brine it (you'll take the ingredients home to replicate it later), whether to deep fry or roast, and how to carve the finished dish. Sip on a glass of prosecco and nibble on Salumeria's meats and cheeses while the dashing McNaughton does all the work to save your holiday.
