The seasonal summer cherry pie.
It’s summer, and that means an abundance of amazing tomatoes: dry-farmed, heirloom, and sweet-as-candy cherry tomatoes.
Delfina Pizzeria takes advantage of this by offering its seasonal Cherry Pie: a perfect chewy crust topped with a thin layer of mozzarella, a generous scattering of colorful cherry tomatoes, shreds of fresh basil, and the salty goodness of ricotta salata.
The cherries’ sweetness is balanced by their marinade, which tastes of vinegar and good olive oil; visually, the pops of red, orange, and yellow delight the eye before the taste hits your pleasure center. This is a pizza that comes but once a year — miss it and you only have yourself to blame.
If you’d like to continue with the seasonal vegetable theme, order the roasted carrots topped with fresh ricotta. The carrots are tender and mildly sweet, the ricotta drizzled with local honey, and a scattering of toasted bread crumbs. Hopefully this, like the Cherry Pie, will stay on the menu for a few more weeks.
