Pairing Beer with Argentinean Cuisine at Lolinda

The new Mission restaurant Lolinda offers California twists on Argentinean cuisine. We were particularly thrilled to discover that the beer list was curated by Master Cicerone, brewer, and beer consultant extraordinaire Rich Higgins.

Higgins created the opening beer menu, which features 10 carefully chosen selections inspired by the European cultures whose immigration to South America helped shape the culinary landscape. Here are some highlights from the list and pairing suggestions, inspired by our rumbling belly:

Goose Island Sofie -- This saison is fermented with wild yeast and aged in used wine barrels with orange peel. The resulting beverage is dry and champagne-like with notes of citrus and white pepper. Pair with the Ceviche de Pescado ($13) as a unique substitute for white wine.

Firestone Walker Union Jack IPA -- This dry-hopped IPA has notes of pine and grapefruit that will cut through the richness of the Hueso Asado ($9), a dish of bone marrow, crostini, parsley, and chile de arbol jelly.

Schlenkerla Urbock -- This German smoked bock is a sweet, smoky barbeque in a glass. Notes of leather and smoked bacon will augment the char on a skirt steak grilled on the asador (Falda, $16).

Ninkasi Oatis -- This oatmeal stout offers a silky body and robust notes of chocolate and coffee that will add depth to a serving of rich blood sausage (Morcilla, $9).
