"I make the chicken salad biscuit to offer a non-fried, boneless option that can appeal to pretty much everyone," says
Wing Wings owner Christian Ciscle of the sleeper on his menu. It's a three-buck item, listed apart from all the chicken wings, something you barely notice unless a friend points it out.
But it's hardly a throwaway dish. Ciscle tosses shredded chicken with mayonnaise, Old Bay seasoning, and finely diced celery -- just enough to give the chicken salad a discreet crunch. He crowns each scoop with dabs of his jerk-inspired herb sauce (one of the optional sauces for his chicken wings) and a bit of remoulade.
The biscuit is a soft one, more buttery than flaky, a convenient handle for the chicken salad. There's a faint and unexpected sweetness to the filling, a hint of sharp shallot, and the flickering scent of the herbs. It's double-take good; even if you've ordered the first one out of curiosity, you may find yourself returning to Ciscle's Lower Haight shop for a biscut bag.
