No. 18: Pralines from Southern Sweets

​After playing around with a recipe given to her by a family friend, Yvonne Hines began selling New Orleans-style pralines in 2002, first at community events and street fairs, then out of her own bakery in the Bayview. Even though she has expanded into red-velvet cupcakes, nutty, brown-butter sugar cookies, and sugar-free mini pumpkin pies, the pralines are -- justly -- still her most famous sweet.

Snap off a bit of the nubbly, irregularly shaped two-inch disc, and it breaks with a chalky crack. It's

all too easy for the sugar in pralines to crystallize, turning them

grainy enough to scour the roof of your mouth. But Yvonne's pralines turn out perfect, the smooth texture halfway between fudge and a butter mint -- a sweet to suck on, savoring the alloy of brown sugar and butter as the praline melts. Despite the fact that you're eating compressed sugar, the praline isn't excruciatingly sweet; it's shot through with toasted, chopped pecans, whose savory note tempers the sugar.
