Hapa Ramen at Bar Tartine
Where: Bar Tartine, 561 Valencia (at 16th St.)
When: Mon., Apr. 11
The rundown: Roaming(-ish) noodle vendor Hapa Ramen returns to Bar Tartine for another pop-up round. Chef Richie Nakano says he'll offer his signature ramen lineup, as well as standout pork dishes sparked by Hapa's ongoing Be Evil contest. Be Evil? Nakano's been asking fans to submit nominations for dishes that represent the "most diabolical" thing to do with a pig (ideas pitched so far: pork shoulder slow-roasted and wrapped in crispy chicken skin, pork loin larded with lardo and guanciale, ham and pig's ear terrine...).
Menu highlights: chicken confit cassoulet, sunchokes and artichokes with preserved Meyer lemon and lardo, double-cut pork chop for two, sesame caramel and coffee semifreddi, date cake with cocoa-nib custard
