Cydonia Fizz, a Frothy Cocktail at Cotogna

Cotogna, the casual new eatery from (and located next door to) Quince, opened Nov. 8. That's meant a revamping of Quince's cocktail menu and the creation of an all-new one for Cotogna. The latter is also offering an innovative prix-fixe program for wine, with all bottles priced at $40.

Cydonia Fizz, named after the genus for "quince," is a blend of apple brandy, house-made quince syrup, orgeat (almond syrup), lemon, meringue (aka egg white), and seltzer. It's sweet enough to make it easy to almost accidentally polish one off in two gulps, yet sophisticated enough to encourage sipping -- and you might just end up with a meringue mustache.
