Stepping into the lair that is Smuggler's Cove ―the nearly year-old shrine to rum and its friends ― you know you're in the right place for a drink when your cocktail menu contains a table of contents. Drawn to the darkside and the promise of "Hellfire tincture," we enjoy the Port Royal, a duo of Jamaican rums with lime and house-made simple syrup that's been flavored with jerk seasoning (prominent notes of allspice, cinnamon, nutmeg, thyme, and Scotch bonnet pepper). Swirled into the drink, a few drops of the tincture give your tongue a quick jolt of electricity, though this is a sophisticated drink, not some straight-up shocker.
