Pastry Chefs Indulge Postmodern Whimsies at Save Room for Dinner

Three leading Bay Area pastry chefs will sub salt for sugar for one night for the upcoming "Save Room for Dinner." Thermidor's Kyle Caporicci, Absinthe's Luis Villavelazquez, and Commis' Carlos Salgado will cook nine savory courses with a dessert engineer's cheekiness. This translates into whimsies such as baked potato cupcakes, bone-marrow crème brulée, and pickled blueberries. Thomas Smith of Town Hall will host, and curate the wine selection. Reservations are limited to 20 guests, so you'll want to act fast if you're interested. Menu and event details after the jump.


• Baked potato cupcake

Caviar, crème fraîche

• Charred Monterey squid ceviche

Watermelon gazpacho, cucumber, squid ink ice

• Cherry/tomato tart

Black olive, chèvre mousse, basil

• Roasted corn soup

Huitlacoche, mulberry, vanilla oil

• Confit of porcini, grilled on the plancha

Warm coffee-scented potato mousse and pickled blueberry

• Snake River Farms coulotte of beef

Bone-marrow crème brûlée, beet, tarragon

• Peached Berkshire pork shoulder

Whole-wheat farina, bacon, grilled peach, nasturtium

• Strawberries roasted in wood embers

Burnt vanilla ice cream

• Chocolate tart

Sweet soy sauce, smoked crumble

• New Orleans iced coffee popsicle
