Saturday's meat case was a chef's dream: plush rolls of pork skin, house-made lamb crepinettes wrapped in lacy caul, a whole lamb carcass, cartons of eggs from pastured chickens, even a pink pig's head. Chuck Traugott, who's spent time at both Fatted Calf and Café Rouge, is the shop's manager.
Bonnie Powell, who blogs at the Ethicurean and organized a CSA for Soul Food Farm, called the new shop "exciting.""It's really good news for Marin Sun ― it's amazing to see David building new infrastructure." Powell said she'd like to see the shop offer meats from other, smaller sources of pastured animals. "I know David works with a network of small-farm producers," Powell said. "I would to love to see him providing an outlet for them."
