Swank Setting, Trashy Burger: Your SFoodie Lunch Planner

As easy as it is to push chunks of meat through a grinder, it's surprising how few kitchens do it. At Epic Roasthouse, grinding burger meat is an essential part of tidying the kitchen, since the prime scraps left from daily butchering end up as patty fodder. You might end up with a burger composed (like the one pictured) of skirt steak, prime rib, and filet -- not a bad load of trash. Daytimes at Epic's swank-ish Quiver Bar, the trashy burger is $20 with a pint of beer and brownie capper. That's a lot up front, for sure. But amortize the calories and it's practically thrifty.
