Guddu de Karahi

When Lahore Karahi abruptly closed in 2012, it left a searing hole in the Tenderloin. As quickly as the Pakistani and Indian mainstay left, it came right back: this time in the Sunset, as Guddu de Karahi. Chef Guddu Haider's exceptional precision shines forth in dishes like the tandoori fish, which is one of the most complex, flavorful entrees anywhere, and in the delectable karahi chicken: hunks of white meat in a rich, oily sauce with tomatoes, spears of ginger, onions, and a panoply of Southeast Asian spices. While definitely below the radar, this is one return to form that every discerning diner should be celebrating.
