Any discussion about Wing Wings' Christian Ciscle, his Lower Haight restaurant, or his time at Little Skillet, inevitably veers towards the biscuits. With good reason -- the Brown Sugar Black Pepper Biscuits are my secret weapons in convincing vegetarian friends to make a stop at the storefront. Now Ciscle has put the biscuit powers to work with his Strawberry Shortcake ($5, strawberry compote, sweet cream, spiced biscuits) at the Off the Grid edition of the Picnic at the Presidio.

You may think you have had a reasonable idea of what strawberry shortcake is, but the Wing Wings version weaves some powerful magic into this picnic treat. Two buttery and flakey biscuits dusted with nutmeg and raw sugar gets doused in a strawberry compote cooked enough to concentrate the fruit without turning into mush. A sash of sweet cream adds some lightness and dairy richness, but it's the syrup that magnifies the whole. The syrup is made with fresh strawberries spiked with xtabentún (a unique liqueur from the Yucatan made from a mixture of fermented honey, rum, and anise seed) that gives it faint anise sweetness, and lovely compliment to the berries and spice. A bite of all the elements combined is the pure essence of summer.
While the cold and gray of the day may hinder your desire to make outdoor weekend plans, the sun will be out making it a perfect picnic day. If you find yourself near the Presidio, grab a blanket, some of Wing Wings' fried chicken and the strawberry shortcake and remember to enjoy those precious sunny days in San Francisco.
