Drink of the Week: Drink #7 at Chambers

Walking into a place you have known as something much seedier is like running into your old party friends who have become born-again. There's a slight flicker of memories, like ghosts, that crop up seeing that corner where you made out with that friend of a friend that ended up being batshit crazy, or the entrance to the bar where you dramatically smoked clove cigarettes in the rain. With a striking and modern remodeling of the space that formerly housed the Backflip and Bambuddha Lounge, it was this layer of primer underneath the fresh coat of paint at Chambers Eat+Drink that made the space more fascinating. Well, that and the cocktails, especially the generically named, but anything but, Drink #7 - Pomegranate Spice ($11, gin, lime, pomegranate, ginger beer, cinnamon bitters).

With a cocktail program that gets occasional help from barman Neyah White (formerly of Nopa), the list is nice, tight, and incredibly drinakable. The fantastic Drink #7 accomplishes much in a little package, tasting spiced and holiday like with a lovely combination of ginger, cinnamon, and pomegranate that is refreshing and light enough to enjoy with some nibbles. Just like the cocktail, I could have had several servings of the Sizzling Tri-Tip ($14, pickled vegetables, mushroom brandy reduction) that encouraged playing with your food on the hot stone.

Drink #7 - Pomegranate Spice

1 ½ oz. Gin

¾ oz. Lime juice

¾ oz. Pomegranate puree

½ oz. Simple syrup

Ginger beer

Cinnamon bitters

Garnish: lemon twist and cinnamon stick

Combine gin, lime juice, pomegranate, and simple syrup in a shaker with ice. Shake and strain into a double old fashioned glass with fresh ice. Fill with ginger beer. Top with two dashes of cinnamon bitters, and garnish with lemon twist and cinnamon stick.
