These new heirloom corn tortillas are the result of family-owned companies joining forces. San Francisco's La Palma, established in 1953 by the Haro family, makes them for Napa's Rancho Gordo, Steve Sando's farm mostly known for a wide variety of beans. The two are helping to keep a third endeavor on the path of tradition.
The corn comes from the Rancho Gordo-Xoxoc Project, which encourages the farmers Sando works with at Xoxoc in Mexico to grow their indigenous plants according to how they've always been and outside of the GMO demands of the international marketplace.
Mass-marketed corn tortillas can taste like cardboard. By contrast, these tortillas are soft, and flavorful. They also crisp up nicely in the oven or fried into chips. Due to the short shelf life of this product, it's not listed on the Rancho Gordo website (though cool products like banana vinegar are there).
