The rundown: The Wednesday guest-chef series is back after an extended holiday break at scrappy little Pal's, this week with Cali bistro heavyweight Laurence Jossel of Nopa. Jossel's sandwich: house-cured and smoked trout, house-smoked bacon, and pickled onions on Acme green onion slab with avocado-Meyer lemon mayonnaise.
