On October 30, an impressive roster of artisan butchers and chefs is convening at Vacaville's Soul Food Farm for a butchery demo and dinner. Inspired by farm founder Alexis Koefoed, the event will be a fundraiser for the newly created U.S. Butchers Guild and a handful of small, local farms.
The day will start with a butchery demonstration from Avedano Meats' Dave the Butcher, who will break down half a steer donated by Agricola Grassfed Beef. Azu Azu will play Brazilian music, and LaTrappe, Pacific Lab, and Winter Hawk Winery will provide the beverages.
After the demo, chefs Paul Canales of Oliveto, David Tanis of Chez Panisse, J.W. Foster of the Fairmont, and Tia Harrison of Avedano's and Sociale are preparing an al fresco dinner with "dazzling beef entrees," which will be served in the fields of Soul Food Farms. In addition to the Butchers Guild, the proceeds will benefit the Farmer-Veteran Coalition, Slow Food Solano, and City Slicker, Shooting Star, and Alemany Farms.
