In June, Whole Foods' Northern California Local Products Forager Harvindar Singh told us he'd had conversations with Bay Area street-food vendors (including Kimball) about developing retail products. Last week, Kimball delivered four products to S.F. stores: Magic Chili Sauce ($5.99), Magic Curry Paste in red and green ($4.99), and Magic Curry Sauce ($5.99).
We took a jar of red Magic Curry Paste into our kitchen to try and re-create the magic of the streets.
We loved its jolt of red Thai chile, garlic, galangal, and lemongrass. Getting out a wok, we foraged for the few bits of vegetation that happened to be hanging around the kitchen (sweet potato, carrot, onion, heirloom tomato). We cooked up a pot of rice (Forbidden black mixed with bamboo green) and popped open a box of organic creamed coconut to use in place of the coconut milk the label called for. Luckily, the substitution worked beautifully, and our curry was ready before the rice was.
We used about half the jar. We've already got designs on the rest, namely a remixed version of Kimball's Magic Curry breakfast sandwich, with curry-enhanced scrambled eggs, Thai basil, and fried shallots on an English muffin.
