Poached eggs on toast. With Jake Des Voignes' jumbo asparagus-laden interpretation, it's no longer food merely for unadventurous toddlers or afghan-swaddled seniors. Local Mission Eatery's signature open-face construction succeeds on the strength of its Meyer lemon-brown butter mousseline, a sauce you'll no doubt need Escoffier On Line to refresh your memory about. Tart and a little tannic, it lifts the whole sandwich above ordinary, even as the toasted slice of brioche (from in-house Knead Patisserie) grounds the thing in a field of butter.
