Carnitas Burrito from La Taqueria

Number 36: Carnitas Burrito from La Taqueria

Twenty years ago, we took everyone we knew to La Taqueria. Later we scorned it for being hipster, since it attracted daily throngs of people like us, very few of whom were actual hipsters. But though we did or didn't show up, La Taqueria went on doing what it always did: Representing the Mission burrito joint as a place more about quality and consistency than simple heft.

The carnitas burrito ($6.50) is La Taqueria's unequivocal work of genius: A neat roll skinnier than the rice-and-cheese-packed gut-busters of less diligent makers, filled with meat of an astonishing texture. Its splayed strands of pork have the bravado of flesh turning into jerky, thick, salty strands your molars have to linger over, swapping juices with hashy pico de gallo salsa and pot beans that don't taste like they've been speed-blasted in some industrial pressure cooker. Avocado will set you back an extra $1.20, but consider it essential. Like butter gobbed on a seared steak, it's a prism through which the pork's sapid flavors intensify, plus it offers gooshy textural relief.
